Griddle Bacon, Eggs and Sweet Potato, to go!


Welcome to my blog spot! This is my very first post and what better place to start than BREAKFAST! Since my husband leaves for the gym (which is where he works!) at 5am and I head to the gym at 6:30am with my two girls in tow, I've got to do something quick. I find that the easiest way is that I do it the night before and put it in to-go containers for us to grab when we wake. The to-go part is optional. You can do this quickly anytime if you want.

Today I cooked uncured Turkey Bacon (from Trader Joe's-the BEST! at $2.99 per 8 oz.), "fried" eggs and shredded sweet potatoes.



Turn the griddle on to about 350 degress and let it warm up while you get the ingredients out.

Do a quick swipe of butter over the entire griddle.(A swipe is exactly that. A swipe is not half a stick!)  Then, starting on the left side put down 2 slices bacon, then shred the sweet potato, using a cheese grater, right onto the griddle along side the bacon. Then crack 6 eggs next to the sweet potatoes. By now it's time to flip the bacon, then sweet potatoes then eggs. Cook another minute or two and transfer the finished product into two separate to-go containers. And that's breakfast in about 10-12 minutes!
