Sausage and Cabbage

OK, Whole Life Challenge participants...here's a good one.  I specifically have a friend in mind who is a school teacher and single mom with valid concerns about the cost associated with changing her dietary habits.  And, to make things even more difficult for her, she claims to be a lousy cook. Well, my dear friend, this is for YOU...cost effective AND easy!

Another thing I need to address...my last trip to Trader Joe's was all in an effort to find WLC approved  foods.  Well, that was sooo much harder than I thought it would be.  EVERYTHING had sugar added to it!  The taco seasoning, sausages, pre-marinaded roasts, bacon and even the organic chicken broth!  I did find two sausages I THOUGHT didn't have sugar, then I noticed, after serving them, that the Smoked, Apple Chardonnay has, well, chardonnay (wine).  Duh!  But, I didn't see sugar as an ingredient at first glance so I grabbed them.  Honestly, I made this recipe with a sausage that has a non WLC approved food in them...SUCK!  I'm going to share it anyways...
 


What you'll need:
2 packages Trader Joe's Smoked Apple Chardonnay Chicken Sausages ($8)
1 onion ($1)
2 peppers (I used red) ($2)
1-10 oz bag Trader Joe's shredded cabbage ($2)
6 slices bacon ($2?)

Chop onion, set aside.
Chop pepper, set aside.
Cut sausages, set aside.
Cut bacon into small pieces.
In a pan, heat some butter or oil on medium high.  Add bacon and saute just a few minutes.  Add the onion, peppers and cabbage.  Cook another 3 to 5 minutes until slightly soft.  Set aside.  Keep pan on and hot.  Add a little more butter or oil.  When that's hot,
add sausages to the pan and cook until done, about 5 minutes.
Mix the sausages with the veggies and serve.

Yep, it's that easy and all for about $15, or less.
Oh, another thing, this is like 4 servings, so you can make it a dinner and lunch the next day.  And, to my "special" friend, this may last you even a third meal!?

Side note: Trader Joe's does have some fabulous dried fruit with no sugar added and unsulferized (sp?)
